Everyday with Kayla Kay


Amanda has asked me to do some blogs about recipe's that we love or just some fun new things that i have tried. i am trying to find some good, new recipe's that i can use in my every day life, i have tried to do a new recipe every week. i l hope you enjoy the posts. Thanks sis for letting me do this.



Whoopie Pies

I love to make homemade whoopie pie. i have tried many different recipe's but this seems to be the favorite with my friends, family and me too. Give it a try and let me know what you think. i guarantee that whomever you serve this to will not mind the experiment. : )





Whoopie pies recipe

- 3 3/4 c. Flour

- 2 c. Sugar

- 2 tsp. baking soda

- 1 tsp. salt

- 6 TB- vinegar

- 3/4 c. oil

-2 tsp. vanilla

- 2 c. water



- Combine all ingredients in a large bowl ( no need to separate the liquid and the dry). Mix on medium speed until batter is smooth, no lumps.

- Put 1/4 c. ( or whatever size you want, feel free to experiment) batter on greased cookie sheet ( i can usually get 6 patty like disks on each sheet) and bake for 10 minutes in a 350 degree oven.

- Cool completely on a wire rack.



Boiled Frosting Filling



Now many of my relatives and friends hate frosting, but i have yet to meet anyone who doesn't like this frosting.





7 1/2 TB. Flour

1 1/2 c. milk



- Mix together in saucepan over high heat. Stir continuously until mixture is very thick. Cool completely.



in separate mixing bowl combine:

1 1/2 c. Soft butter

1 1/2 c. Sugar

1 1/2 tsp. vanilla



Beat together, then add cooled flour/milk mixture and beat for 5 minutes until very fluffy


Last of all assemble your whoopie pies. Finally the best part of all, sampling your hard work.

Our Trip to PA part 4: Eklektikos

We so enjoyed our trip to Pennsylvania! God was good in providing the means and time for us to be able to go and we are so thankful to Him! This is the last installment of the "Pennsylvania Chronicles" and it depicts random moments from our visit- thus the title "Eklektikos" which is the greek word for eclectic! : )

Our Trip to PA part 3: Train Museum

A day at the Scranton Train Museum (National Park)
For some reason, it took us awhile to actually enter the building. We couldn't seem to find the entrance!!
There was a sign on this table that ENCOURAGED people to touch things and pick them up!

This was such a neat museum! It had many interactive displays and was so informative. For any history buff it would be very enjoyable!
Can you imagine having to wait near the tracks and carefully signal the trains with an oil lantern- if it was me, it would be flying off into the darkness somewhere!!

This is the front of the train- the firebox. This is what it looks like when they are cleaning it, which was the most dangerous job and not at all coveted. It reminds me of something from Star Wars!

Angela in the postal car. As a postman in a train car, you had to be very quick and accurate. The post was hung in bags near the track in each town and was obtained with a long bar with a hook on the end. You only got one chance to get the bag or the mail would have to wait there until the next round!

Look what we found- a Hobo!! 
Apparently hobos had their own written codes that would indicate if there was any food around or if there were police, ect, and they would leave these marks for other hobos along the railroad tracks.
