Everyday with Kayla Kay


Amanda has asked me to do some blogs about recipe's that we love or just some fun new things that i have tried. i am trying to find some good, new recipe's that i can use in my every day life, i have tried to do a new recipe every week. i l hope you enjoy the posts. Thanks sis for letting me do this.



Whoopie Pies

I love to make homemade whoopie pie. i have tried many different recipe's but this seems to be the favorite with my friends, family and me too. Give it a try and let me know what you think. i guarantee that whomever you serve this to will not mind the experiment. : )





Whoopie pies recipe

- 3 3/4 c. Flour

- 2 c. Sugar

- 2 tsp. baking soda

- 1 tsp. salt

- 6 TB- vinegar

- 3/4 c. oil

-2 tsp. vanilla

- 2 c. water



- Combine all ingredients in a large bowl ( no need to separate the liquid and the dry). Mix on medium speed until batter is smooth, no lumps.

- Put 1/4 c. ( or whatever size you want, feel free to experiment) batter on greased cookie sheet ( i can usually get 6 patty like disks on each sheet) and bake for 10 minutes in a 350 degree oven.

- Cool completely on a wire rack.



Boiled Frosting Filling



Now many of my relatives and friends hate frosting, but i have yet to meet anyone who doesn't like this frosting.





7 1/2 TB. Flour

1 1/2 c. milk



- Mix together in saucepan over high heat. Stir continuously until mixture is very thick. Cool completely.



in separate mixing bowl combine:

1 1/2 c. Soft butter

1 1/2 c. Sugar

1 1/2 tsp. vanilla



Beat together, then add cooled flour/milk mixture and beat for 5 minutes until very fluffy


Last of all assemble your whoopie pies. Finally the best part of all, sampling your hard work.

Hey Kay, These whoopie pies seem dry... Do you put anything in them besides flour?? I really want to make them, but I am just not sure... ;)
